Kalalou - Okra

Okra is a staple in many countries, it is a mainstay in gumbo the most famous and popular dish of Louisiana. While here in Haiti when one says kalalou a very popular dish originating from Les Cayes and Jerémie is visualized. It is often used in stews and soups.

Sliminess can be minimized by keeping the pods intact and by cooking briefly like stir-frying. In addition, adding lemon juice, tomatoes, or vinegar when cooking the okra or cutting thinly can also minimize sliminess.
